Yummy Yummy in my T-U-M-M-Y!!

We are very blessed to have a neighbor who is a chef  (Tom).  He currently is teaching a class at our local college for fun.  The class semester is all about cupcakes! Well Tom cant go to class with out testing his new cupcake creations on somebody.  We are the blessed  test group.  Great for my taste buds bbbaaaddd for my waist line! Here is a picture i took of Toms latest cupcakes.  He calls the "carnival cupcakes"  They were a yellow cupcake with bits of yummy candy throughout and a drizzel of caramel in the center that just makes the cupcake melt in your mouth.  Then topped on that was this yummy chocolate sauce and carmel corn.  Then the final touch is what i think is a caramel icing.  Each element alone was amazing but if you work up the courage to take one giant bite its AMAZING!!!!
After devouring 2 cupcakes with in a few hours of each i decided to go easy on the dinner for myself.  I had a simple baby greens salad with shaves fennel topped with a home made vinagrette dressing and a yogurt.  Despite how that sounds it was extremely filling and yummy. 


The dressing was so simple.  check it out below.  If i had had some maderine oranges that would have been the perfect finish to a delicious simple salad. 
The amount i made was for about 3 servings and i used one fo those italian dressing bottles that has the "V" "O" etc so you know how much to make.  First i added 6 tbsp of redwine vinigar.... then 2 tbsp of honey.... 1 tbsp minced garlic.....salt and pepper.  this filled my bottle just so happens to the "V" line so i filled the bottle with extra virgin olive oil just to below the "O" line which if i had to guess was approx 1/4 cup EVOO.  I tend to like my dressings more vinigary than oily.  Sooo good!  

The kiddos had mini burgers.  I took some lean ground beef, shaved carrot, tiny bit of salt and peper, a little onion grated and some grated cheddar cheese.  I mixed it all in a bowl and created a bunch of little mini burgers.  i did a basic frozen peans and carrots and a side of asparagas for them to try.  The asparagas was drizzeled with EVOO, salt, pepper, and minced garlic.  Then i just grilled it on the same grill pan the burgers were on.  The kids didnt care for it bc i think it was still a bit to hard for them to chew but i ate it for them just fine hahaha!

Last week was PIZZA!!! I had some left over chicken from the crockpot earlier that day so i diced that up, sliced some green peppers and onion topped it all with mozzerella cheese and sauce on wheat pizza dough! so good the kids shared a quarter of the pie themselves!


And when daddy is home... well dinner can be a mess so who better to help clean than the dgos.  This is not what i had in mind when i told Mike to just let the dogs have what fell.  men... i tell ya!
